Flavors of Goa - The Roundup
The 'Flavors of Goa' event has been a great oppurtunity of learning the richness and diversity of the state of Goa, not only in terms of the cuisine, its uniqueness and similarities, but also its culture. In this roundup, we have recipes that are a clear statement to the Portugese influence on Goan cuisine as well as the Malvani influence. We also have an equal number of vegetarian and non vegetraian entries too. Thanks so much to all the bloggers who have sent in their entries and also to Nayna again, for giving me the oppurtunity to host this event @ Oh Taste n See.

Roast cumin seed then add scrapped coconut. After few seconds add ginger, garlic and tamarind paste with little bit of water. Apply half of the ground paste to fish leave the rest aside.
Heat a non-stick pan. First add onions until it turns into brown. Add green chilies and cook on medium heat for three minutes. Stir constantly. Add the remaining paste and stir well. Roast for three minutes, on low heat, till a pleasant aroma is given out. Add one and a half cups of water. Bring to a boil and then add the marinated fish pieces, chillie curry powder and salt. Cook on low heat for about five minutes or till fish is just done. Stir in vinegar and serve hot with steamed rice.
