Sugar free Tofu chocolate mousse
Chocolate mousse made from silken tofu

Method
Melt the sugar-free chocolate chips in the microwave, for 2 minutes in 30 second increments until smooth.
Blend all the ingredients except the melted chocolate in a high-speed blender. if using Ninja High speed blender, blend in extract mode for one cycle.
Add the melted chocolate chips and blend again until smooth, another extract cycle if using Ninja Blender.
Transfer to a serving dish, chill for atleast 2 hours for mousse to set.
Top with sugar free whipped cream, dust with more cacao powder and enjoy!
