Today is my mom's birthday, and I wanted to post a sweet dish to wish her a very Happy Birthday. I bet everyone says their mom has made a big difference in their lives...but I owe almost everything of what I am to my mom and the way she chose to bring me up. Thanks mom....and wish you all happiness..

This is a quick and easy Apple Rabri that uses less than 5 ingredients and can be made in less than 15 minutes. Yep, I had two shortcuts: use canned evaporated milk and a microwave. Once you discover how easy it is to put something like this together, you'd be amazed.

Place the evaporated milk in a deep dish and microwave on high for 4 minutes. Meanwhile, peel and grate the apples. When the milk has come to a boil, add the apples and cook for another 4 minutes, pausing and stirring every 1 minute. Take care that the milk doesn't spill over. The mixture should thicken up nicely now. At the end of the 4 minutes, add the sugar and cardamom. Cook for a couple more minutes.

Spoon into serving dishes. Sprinkle with the pistachios. Chill and serve.

Verdict: Not very sweet or rich. The milk and the apple work very well together, accentuated by the cardamom and pistachios. When chilled it makes it a very delicate, elegant dessert. Not too bad for 15 minutes, huh! :)
