Avocado Chutney

Method

I have been trying to use avocado more in my kitchen because of the many health benefits that it poses. It is considered a super fruit, and rich in magnesium, potassium, folate and beta-sitosterol. It is the recommended natural food to develop healthy bones, to regulate blood pressure, to aid in the prevention of migraines, type II diabetes, stroke and heart disease.

In an attempt to do this, I tried to make a chutney using avocado to go with my Onion rava dosa. It is an Indianized version of America's favorite dip, guacomole. We really loved this chutney, and since it is very healthy, I am going to be making this quite often from now on. Ingredients:

1 onion sliced

1 tomato chopped

1 clove garlic

3 whole red chillies

1 avocado diced

1 tbsp chopped cilantro

1 tsp tamarind paste

1/2 tsp oil

salt to taste

For tadka:

1 tsp oil

1/2 tsp mustard

1 tsp urad dal

curry leaves

Heat oil in a pan over medium heat, add the red chillies and fry. Then, add the sliced onion and garlic. Saute until soft. Add the tomato and saute until the juices flow out. Switch off the stove and let this cool. Meanwhile, seed and dice the avocado. Add the avocado, tamarind paste, cilantro and the cooled mixture to the blender and grind to a smooth paste.

Make the tadka by heating oil in a small pan, splutter the mustard and add the urad dal. When the dal browns add the curry leaves. Add the tadka to the chutney.

Verdict: It was creamy and delicious, and had a sweet undertone to it. We loved this chutney.

I am sending this chutney to Mharo Rajasthan's 'Vegetable/Fruit of the Month - Avocado' Event.
