For Day 2 of the Smoothies theme, I wanted to pick a really vibrant color to contrast the Blueberry Beet smoothie done yesterday. Trying a 'Green Smoothie' has on my to do list for a while and I thought this was a perfect opportunity. If you have never heard of green smoothies - they are the recent health rave, you may have seen some of these in smoothie chains, it is made by mixing up green veggies along with fruits in a smoothie. Typical greens added are spinach or kale and other green veggies such as celery or cucumber are also added. Fruits such as banana and apple are added to aid in sweetening the smoothie naturally.
I had a hard time choosing one green vs the other and one vegetable or fruit, so I decided to make a smoothie with everything I had on hand. You may have seen my 'Everything but the Kitchen Sink' cookies. This is my 'Everything but the Kitchen Sink smoothie'. I even added scoop of protein powder, for an extra boost of protein in the smoothie. The recipe below is just a guideline, you can adapt by using whatever is available to you and what you like.
Place all the the vegetables and fruits listed above in a blender. Blend until smooth, you can thin it with more milk or water as needed. Add agave nectar to your sweetness and protein powder if using. Blend util smooth.
Verdict: This smoothie is so filling and nutritious. Don't be intimidated by the vibrant green color, it tastes really smooth and creamy and sweet too. I have had this smoothie for breakfast and lunch and I just loved it!
