Vegetable Oothappam/ Vegetable uthappam
Method
This is one of my favorite tiffin items, because it is loaded with veggies and tastes awesome. I just use regular idly/dosa batter and top it with finely minced veggies. I have used carrot, onion, cauliflower and cilantro here...but I have done other variations with cheese, tomato, bell peppers, green beans and scallions. I don't even need a chutney for this , coss its really high on flavor..
Mound up the minced veggies of choice in individual piles over the cutting board. Sprinkle with salt and pepper to taste. Mix to combine with fingertips. Heat the griddle and when hot, pour a ladle of the dosa batter onto the griddle. No swirling..just spread it to a even thickness. Sprinkle evenly with each of the veggies. Spray the top with the non stick cooking spray. Cover with a lid. This helps the veggies to cook from the steam. After a minute, flip the uthappam carefully and cook the other side, until the onions are golden brown, crispy and caramelized. Serve hot with chutney.
Verdict: The edges get nice and crispy, but the inside is still crunchy and laden with veggies...Quick, easy and healthful alternate to plain old dosa.
