Crispy Baked Okra

Method

Inspired by the success with the crispy oven baked cauliflower recipe, I decided to make a quick and easy crispy baked okra. This was super easy, one: because I used frozen cut okra and two: because this is no fuss recipe..all I had to do is toss it once and place it in the oven. No baby - sitting and very less oil too.

Normally, I use frozen okra only for kuzhambu, sambar etc, coss when I need to saute it, it tends to get mushy from the excessive tossing and turning. But, I do admit, on weekdays, frozen cut veggies do come in handy. With that in mind..this recipe is a great help.

Preheat oven to 450 degrees.

Place all the ingredients in a bowl and toss to combine. Line a baking sheet with foil and spray with non stick cooking spray. Place the okra in a single layer and cook for 20-30 minutes until crispy. Toss once half way through cooking, and if you find it drying out too much, just spritz it with the non stick cooking spray as needed. Set the oven on broil for the last 5 minutes of cooking to make it reallly crispy.

Crispy okra is ready to enjoy....

Verdict: The okra was crispy and crunchy...you can even snack on it while watching a movie..It also serves as a great side to rice dishes.
