Fish Fry

Method

I don't usually cook sea food at home. It makes rare appearances in my kitchen. But I know that my husband loves fish fry and my brother was also visiting me and requested I make fish fry for him. Now the votes were 2 to 1 and I had to oblige. We usually make fish fry with King fish back home in India, but it is very difficult to find it here in the States. The best substitute I have found is Tilapia, but unfortunately I could'nt find that either.This recipe is using Mackerel, but feel free to substitute any firm fish that you can find.

Rub the white vinegar on the fish. Let sit for a couple of minutes. Rinse it off and pat the fish completely dry. This reduces the smell of fish. However, if you don't mind the smell, skip this step.

Mix together the turmeric powder, chilli powder, cumin powder, salt and pepper. Rub this on the fish steaks. Cover and place in the refrigerator to marinate for about 30 minutes. Heat 1 tbsp of oil in a small frying pan over medium high heat. Rotate the pan, to coat evenly in oil. Place the fish in the hot oil. Cook one side. Flip and cook until the other side becomes crisp. Drain and serve hot.

Verdict: Perfectly spiced, crispy outside and soft cooked fish on the inside. Goes perfect as an appetizer or as a side dish.
