Dish: Scrambled Tofu Lettuce Wraps/Tofu Bhurji
For the last day of the Blogging Marathon theme of 'Low Carb Recipes', I wanted to post a Vegan Low Carb recipe. Although, eating eggs has helped me tremendously to stay on course with the low carb lifestyle, and the fact that I don't eat any meat or fish has hindered by ability to have options, there are a lot of low carb vegan recipes. A particularly delicious one is this Srambled Tofu Lettuce Wraps. I usually make spicy scrambeld tofu called Tofu Bhurji to go with out rotis. It is an easy way of having the family eat healthy food that is high in calcium and protein.
The Lettuce Wrap idea was inspired by P.F. Changs, and although it is listed on their menu as an appetizer, I order it as my meal every single time I visit their restaurant. I have often thought about how to Indianize that recipe and use curry flavored scrambled tofu in place of the Chinese flavors. Tofu Bhurji was one bird in two stones, coss the family ate it with rotis and I wrapped mine in Lettuce. Everybody happy at the end of the day. :)

Drain the tofu, and press between layers of paper towels to get rid of as much moisture as possible. Set aside.
Heat the oil and add cumin seeds. Let them sizzle and add in the chopped green chillies, ginger and garlic. Let the chillies, ginger and garlic infuse the oil and then add the chopped onions. Saute for a couple of minutes and add the tomaotes, turmeric powder and salt to taste. Add the chopped bell peppers and saute for a couple of more minutes. Crumble the tofu directly in the pan. Using your spoon break the bigger pieces of tofu so that it resembles scrambled eggs. Saute on high heat for about 5 minutes until all the moisture evaporates from the tofu.
Sprinkle in the garam masala and ground black pepper. Let the flavors meld for a couple more minutes. Finish it off with a the chopped coriander leaves.
For serving the lettuce wraps, wash, wipe and chill the lettuce leaves. Spoon the scrambled tofu into the lettuce, squeeze a wedge of lemon. Garnish with a sprig of cilantro or if you are adventurous a small slice of chilly.
Verdict: The spicy curry flavored tofu scramble along with the bell peppers and onions were great wrapped up in the lettuce leaves. The soft tofu and the cool crisp lettuce make a wonderful and refreshing combination. Don't miss the squeeze of lemon juice coss it really perks up the flavor of the dish to a new level. A gourmet low carb experience!
